Our raw chocolate pudding pie is a decadent chocolate treat, that’s also good for you. We use avocado and banana for a natural dairy-free creaminess, and dates and maple syrup for natural sweetness. We put it in a delicious chewy vegan non-bake shell. Then we add a few cashews on the top for a nutty taste. We make it with cacao, cashew nuts, dates, banana, dried coconut, filtered water, coconut nectar, maple syrup, coconut oil and vanilla extract.
Cacao is high in polyphenols and flavenols, which helps improve blood flow, reduce blood pressure and improve mood. Avocados are loaded with potassium and fiber and are a good source of Vitamin K, Vitamin C and folate. Cashews have a low glycemic index (GI), which means they won’t spike your blood sugar levels, and are full of fiber, to help digestion, healthy fats and high-quality plant-based protein. They’re also loaded with magnesium, which helps with heart health as well as regulating nerves and blood pressure. Dates are high in fiber, disease-fighting antioxidants and minerals that support good bone health. Coconut oil is a good source of healthy fats that are important for proper brain function, reducing hunger and raising the good blood cholesterol (HDL) levels.
