Brown Rice Vermicelli Stir-Fry with Vegetables and Chicken
Ingredients:
– 1 package Peacock Brown Rice Vermicelli
– 2 tablespoons extra virgin olive oil
– 2 cloves garlic, minced
– 1 inch ginger, minced
– 1 large chicken breast, thinly sliced
– 1 bell pepper, thinly sliced
– 1 carrot, julienned
– 1 cup broccoli florets
– 1 small onion, thinly sliced
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon hoisin sauce
– 1 teaspoon sesame oil
– Salt and pepper to taste
– 2 green onions, chopped
– Sesame seeds for garnish (optional)
Instructions:
1. Prepare the Vermicelli: Cook the Peacock Brown Rice Vermicelli according to the package instructions. Typically, this involves soaking the vermicelli in hot water for about 5-7 minutes until they soften. Drain and set aside.
2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove the chicken from the pan and set aside.
3. Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the bell pepper, carrot, broccoli florets, and onion. Stir-fry for 3-5 minutes until the vegetables are tender but still crisp.
4. Combine and Season: Return the cooked chicken to the skillet with the vegetables. Add the drained brown rice vermicelli. Pour in the soy sauce, oyster sauce, and hoisin sauce. Toss everything together until well combined and heated through. Drizzle with sesame oil and season with salt and pepper to taste.
5. Garnish and Serve: Transfer the stir-fry to serving plates. Garnish with chopped green onions and a sprinkle of sesame seeds if desired. Serve immediately and enjoy your delicious and healthy Brown Rice Vermicelli Stir-Fry!
