Ingredients:
– 1 package Peacock Rice Vermicelli
– 1 cup cooked shrimp or grilled chicken breast, thinly sliced
– 1 cucumber, julienned
– 1 carrot, julienned
– 1 bell pepper (red, yellow, or green), thinly sliced
– 1 cup bean sprouts
– 1/4 cup fresh mint leaves
– 1/4 cup fresh cilantro leaves
– 1/4 cup fresh basil leaves
– 1/4 cup roasted peanuts, chopped
Dressing:
– 1/4 cup fish sauce
– 2 tablespoons lime juice
– 2 tablespoons rice vinegar
– 1 tablespoon sugar
– 1 clove garlic, minced
– 1 small red chili, finely chopped (optional)
– 2 tablespoons water
Instructions:
1. Prepare the Vermicelli: Cook the Peacock Rice Vermicelli according to the package instructions. Typically, this involves soaking the vermicelli in hot water for about 5-7 minutes until they soften. Drain, rinse with cold water, and set aside.
2. Prepare the Dressing: In a small bowl, whisk together the fish sauce, lime juice, rice vinegar, sugar, minced garlic, chopped chili (if using), and water until the sugar is dissolved. Set aside.
3. Assemble the Salad: In a large bowl, combine the cooked vermicelli, cooked shrimp or grilled chicken, cucumber, carrot, bell pepper, and bean sprouts. Add the fresh mint, cilantro, and basil leaves.
4. Add the Dressing: Pour the dressing over the salad and toss gently to combine, ensuring all the ingredients are evenly coated.
