Ingredients:
– 1 package Peacock Rice Spaghetti
– 2 tablespoons extra virgin olive oil
– 2 cloves garlic, minced
– 1 small red onion, thinly sliced
– 1 cup cherry tomatoes, halved
– 1 zucchini, sliced into half-moons
– 1 red bell pepper, thinly sliced
– 1/2 cup Kalamata olives, pitted and sliced
– 1/4 cup sun-dried tomatoes, chopped
– 1 cup baby spinach
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Sea salt and pepper to taste
– 1/4 cup crumbled feta cheese (optional)
– Fresh basil leaves for garnish
Instructions:
1. Prepare the Spaghetti: Cook the Peacock Rice Spaghetti according to the package instructions. Typically, this involves boiling the spaghetti in water for about 8-10 minutes until al dente. Drain and set aside.
2. Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced red onion, and sauté for 2-3 minutes until the onion becomes translucent and the garlic is fragrant. Add the cherry tomatoes, zucchini, and red bell pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
3. Combine Ingredients: Add the Kalamata olives and sun-dried tomatoes to the skillet, stirring to combine. Add the cooked spaghetti to the skillet, tossing gently to mix with the vegetables. Sprinkle in the dried oregano, dried basil, salt, and pepper. Stir to ensure the spaghetti is well coated with the seasonings and vegetables.
4. Add Spinach and Cheese: Add the baby spinach to the skillet and cook for an additional 2-3 minutes until the spinach is wilted. If using, sprinkle the crumbled feta cheese over the spaghetti and toss to combine.
