Our tart and mildly spicy sambal hijau (green chili sambal) is our version of the fiery traditional condiment so loved by fans of Padang food from Java. We make our sambal hijau more mellow, not so spicy, but keep the green goodness of the original. It adds a milder bite and flavour to a wide range of dishes: egg, fish, meat or plant based. We make it from green tomatoes, green chilis, Bali heritage garlic, coconut oil, extra-virgin olive oil and lime juice, with a touch of Bali sea salt. Chilis are high in Vitamin C and betacarotene, which the body converts to Vitamin A. Coconut oil is a good source of healthy fats that are important for proper brain function, reducing hunger and raising the good blood cholesterol (HDL) levels.
