Cosmic Coffee is a small sustainable livelihoods project on Mt. Batur producing some of the best coffee in Bali. Coffee farmer/holy woman Jero and her partners use traditional processes in order to support villagers and protect their environment, and pay farmers above market rates for the ripest red Arabica cherries.
Shaded by citrus and hardwood trees, nourished by volcanic soil, organic fertilizer and pure rainwater, the ripe cherries are hand picked and pulped, fermented, rinsed and dried in the mountain sun. The beans are roasted by hand in small batches and delivered to customers within 24 hours. This obsessive attention to every part of the beans’ journey, from mountain tree to market, gives you the freshest coffee with an outstanding flavor profile of dark chocolate, toasted pecans and citrus: the taste is out of this world.
The Cosmic Coffee Viennese Roasted is a medium to dark roast level for coffee beans, offering a balanced flavor that sits between lighter roasts and darker ones. It typically involves roasting the beans to just after the second crack, resulting in a slightly oily surface and a richer, fuller flavor compared to lighter roasts. The beans are dark brown, but not as intense as those used for darker roasts.
Viennese roast tends to have a smooth, well-rounded taste with a balance of both acidity and bitterness. This roast level allows the beans’ origin flavors to remain noticeable, while also introducing more toasted, caramelized, and sometimes chocolatey notes due to the longer roasting process.
