We get our brown lentils from Kazakhstan. Brown lentils are the most common variety of lentil, and probably the one that you see at your local grocery store. They can range in color from khaki-brown to dark black, and generally have a mild, earthy flavor. They cook in about 20 to 30 minutes and hold their shape very well.
Brown lentils are packed with B vitamins, magnesium, zinc, and potassium. They are made up of more than 25% protein, which makes them an excellent meat alternative. They’re also a great source of iron. 1 cup (198 grams) of cooked lentils generally provides 230 calories and 18g of protein!
Lentils are also high in fiber, which supports regular bowel movements and the growth of healthy gut bacteria.
