Our sundried tomato quiche is a veggie twist on our classic quiche. We use sun-dried tomatoes for a tart, tangy flavor and cashews for extra protein. Our creamy quiche is a delicious non-meat way to get a protein boost anytime of the day. Top it with some of our homemade green chili or hot sambal, add to a salad or steamed vegetables, and you’ve got a healthy, fiber-rich lunch or dinner.

Tomatoes are a good source of Vitamin C and heart healthy lycopene. The cream and parmesan cheese deliver a dose of calcium, important for strong bones. Cashews have a low glycemic index (GI), which means they won’t spike your blood sugar levels, and are full of fiber, to help digestion, healthy fats and high-quality plant-based protein. They’re also loaded with magnesium, which helps with heart health as well as regulating nerves and blood pressure. Cashews may also be good for people with Type 2 diabetes by controlling blood sugar and insulin levels. We use organic cashews that we source from an independent collective in Wonogiri, Indonesia, that supports small-holder farmers and their families.
